Together they talk through the Gavroche wine list over the years, what will happen to the bottles after the doors in Mayfair close for good, how the British food scene has evolved, a few of his favourite wine producers that have been fixtures from the beginning, what wine goes best with cheese (and more particularly with the restaurant's famous 'less of a cheese trolley, more of an articulated lorry' selection), what kind of wine you should never cook with, and the bottles he'll be opening on the final night of January 20th.
