Château Doyac Bordeaux Blanc Le Pélican 2022
Silky texture, the warmth of the vintage comes through with the toasted cumin spice, set against plenty of rich fruits, nectarine pit, peach and pear. Concentrated but with balance, lacks a little light and shade but plenty of enjoy here. Comes from 1.5ha of vines on the limestone plateau of St Seurin de Cadourne, with the first vintage in 2019. Over the next few years they are also looking to do a Chardonnay and a Pinot Noir cuvée. Fermented cool at between 16°C and 20°C, ageing on lees in 20hl wooden vats, plus amphora and 300l barrels, with lees stirring every two days for three months. Bottled after 8 months ageing in total.
