Château Haut-Bergey Pessac-Léognan Haut-Bergey Cuvée Paul 2021

Careful winemaking, and this is a rare unoaked cuvée to look out for in Pessac-Léognan, but it struggles in 2021 because of the challenge fully ripening fruit. Majors on undergrowth and tomato leaf, with plenty of attractive slate and sage along the way, and a hefty dose of black pepper spice from the Malbec. Demeter certified. Harvest September 14 to October 5, fermentation and ageing in stainless steel.
