Château Pajzos Tokaj Tokay Esszencia 2015
First time going through the Bordeaux system for this unusual, utterly stunning wine that needs to be approached slowly, and with an open mind. A barely-there 2% of alcohol gives you a clue to the texture and opulence that you are going to find in the glass, as nearly all of the sugar in the grape has remained in the wine rather than been fermented into alcohol. It means you get an almost pure apricot hit of fruit, peach purée, nectarine stones, lime zest, concentrated saffron and orange marmalade. It’s almost overpowering, which is why I suggest keeping the temperature cool and slowing down your day to make the most of this slice of heaven.
