Château Pazjos Tokaj Essencia 2019
Dominant apricot and white truffle, this is rich and powerful, full of luscious amber fruit and spice. Intense and concentrated, a wine that is made in tiny quantities, intended to be drunk as a drop of pure pleasure. Just have a look at the alcohol content to get some idea of why this is so special – it’s just 4% because it has a residual sugar level of somewhere close to 500g/l, making it basically beguiling, tempting, luxurious liquid sugar, collected from the free run juice, no pressing involved, left to ferment slowly in glass jars.
