Distinct floral character in this vintage, violet and peony, fragrant fennel, cola, cocoa, eucalpytus, garrigue. High Coonawarra component in the grape sourcing. Smooth tannins, still young and not quite ready yet smooth and supple, a signature of the 707 that reflects how quickly the wine is taken off the grape skins after fermentation – a winemaking technique that becomes much clearer in the young wines, when Cabernet tannins can typically be tight or angular. 100% new American oak for ageing.
