Plum colour, deepening from the earlier years, and holding its colour integrity from core to the outer rim. Cocoa bean, liqourice, mint leaf, eucalyptus, slate, this feels balanced and on signature of 707 Cabernet, tannins are smooth and pristine but starting to layer up, a litle awkward through the finish, muscular even at 34 years old age, grilled and charred. Double decanted just before serving. 100% new American oak, John Duval chief winemaker.
